    Can I limit the amount of zoom or even disable the zoom with the mouse wheel?

    yes, in Verge3d panel of camera settings.

    These settings? They don’t appear to do anything when I export and refresh in the browser.

    Figured it out. Loaded up a stock scene and copied the camera settings. Works now.
